Sugar-Coated Walnuts 糖衣核桃

It has been a while since I posted my last blog. With unexpected travels and a few different things going on, my schedule has been a little erratic. Glad to be finally back in the kitchen and blogging. Today I will share a simple recipe which can be easily prepared at home. I have been served this delicious appetizer at Chinese restaurants many times but had no idea how to make it. Recently, a friend brought it for a gathering and the bowl of nuts quickly disappeared. She was kind enough to share the recipe with us later.

Walnuts thickly-coated with sugar and cinnamon, and while they are being roasted, the wonderful aroma fills the house. Once they are done you will be rewarded with sweet spiced crunchy delicious walnuts. One of those snacks that is quite hard to stop nibbling on once you start. It's a great home-made snack for the holiday season or when you have guests over.

Ingredients:

1 lb (450g) walnuts - raw

1 egg white
1 tsp vanilla essence
1/2 tsp water

1 cup sugar
1 tsp salt
1 tsp ground cinnamon

Preheat oven to 300 deg F.

Whisk egg white, vanilla essence and water in a large bowl till frothy.

Add walnuts to egg white mixture and mix evenly.

Mix sugar, salt and ground cinnamon in a small bowl, sprinkle evenly over walnuts and mix well.

Spread the walnuts out on a baking tray and bake in preheated oven for 45 minutes. Every 15 minutes, mix the walnuts to ensure even baking.

When done, remove from oven and allow to cool before serving or storing in airtight container.
