Steamed Minced Pork with Tofu 豆腐蒸肉饼


Our family just got back from a short road trip, one which our diet consisted mainly of hamburgers, french fries, sausage, eggs, etc. We ended the trip with a sumptuous Korean BBQ meal where we enjoyed lots of heavily but deliciously marinated steaks, pork belly, chicken, etc.

Usually after a trip like that, my husband will say: "please cook something light and healthy". I too crave for lighter meals, and the idea of congee with some side dishes always comes to mind.

Today's dish goes perfectly with congee or rice. Lightly-flavored with Tianjin preserved vegetable, soy sauce and other seasonings, the flavor is very tasty yet not too over-powering. Adding tofu to the minced pork creates a wonderfully tender, moist and light texture. A simple recipe which requires minimal preparation and time.

The idea was a success, everyone was happy with our 'light' dinner, and ended up having extra helpings of congee.



STEAMED MINCED PORK WITH TOFU RECIPE
Serves 3-4

Ingredients
300g minced pork
300g extra soft or soft tofu
4 Tbsp tianjin preserved vegetable 天津冬菜
1 Tbsp + 1 tsp soy sauce
1 Tbsp Shaoxing wine
1 tsp sugar
1 tsp sesame oil
1/4 tsp white pepper powder
1 stalk scallion, finely chopped


Steps:

1) Rinse preserved vegetable a few times and soak in water for 10 minutes. Drain and squeeze dry. Chop into smaller pieces.

2) Using a deep dish (suitable for steaming), add minced pork, preserved vegetable, soy sauce, Shaoxing wine, sugar, sesame oil, pepper and mix well.

3) Add tofu to minced pork, mix well and gently flatten the mixture.


4) Over high heat, steam minced pork for 20 minutes.

5) When cooked, sprinkle chopped scallions and serve hot or warm.
